We try to taste - test a steak for flavor & tenderness, (usually Delmonico) from every beef we get slaughtered.
Our family enjoys steak, but when we get 12 beeves back at once, we have quite a steak eating affair - lasting for several days!
Here's our simple preparation, finished to just past 'rare'.

2 - 3 steaks (That's what fits nicely in our cast iron pan.)
Sea Salt ~Sprinkle liberally on both sides.
Pepper ~sprinkle to your preference on both sides.
Pre-heat oven to 400'.
Sear steaks 2 min. on each side, on high heat.
Then slide the whole pan into the pre-heated (or nearly) oven for approx; 8- 10 min.
Remove from oven & let sit for 5 min. before cutting.
** If you don't have a cast iron pan; you can fry the steaks, then transfer them to an oven-safe dish.
